Stuzzichini d’acciughe / Appetizers of anchovies

Quando la tradizione regala un modo per unire un pesce azzurro molto versatile con il sapore della terra dato dal formaggio. Un veloce stuzzichino che piacerà a grandi e piccini.  


Ingredienti per circa 6 persone:


1 Kg di acciughe fresche
100 g di filetti d’acciughe sott’olio
200 g di pecorino fresco
un pò di farina
3 uova
una ciotola di pangrattato
2 limoni freschi a spicchi
olio extra vergine d’oliva
sale quanto basta

Pulire e lavare con cura le acciughe. Aprirle a libro, eliminando la testa e la spina centrale senza però dividere il pesce in due, per poi asciugarlo con cura.
Farcire i pesci con un filettino di acciuga e una fetta sottile di formaggio. Richiudere le acciughe, passarle prima nella farina, poi nell’uovo sbattuto ed infine nel pangrattato.
In un grande tegame friggere le acciughe con olio bollente finché non saranno dorate.
Asciugarle dall’unto della frittura e servirle calde con spicchi di limone e un pizzico di sale.

When the tradition give a way for unite the versatile anchovies with the flavour of earth gave from cheese. A fast appetizer that will like to all ages.

 

Ingredients for about 6 people:


1 Kg of anchovies
100 g of fillets of anchovies
200 g of fresh Pecorino cheese
some flour
3 eggs
a bowl of breadcrumbs
2 fresh lemons to segments
extra virgin olive oil
salt to taste

Carefully clean and wash the anchovies. Open them at book, remove the heads and the central bones, nevertheless without divide the fishes into two, then carefully dry them.
Stuff the fishes with one fillet of anchovy and one slice of Pecorino cheese. Close again the anchovies, before pass them in the flour, then in the beat eggs and finally into breadcrumbs.
Heat the oil in a big pan and so let brown the anchovies until at the browning.
Dry the greasy of fried food and serve hot with segments of lemon and a pinch of salt.
