Anadi insimbuada / Roast duck with crispy semolina

“Semplicità” è la parola d’ordine di questa ricetta molto antica della tradizione sarda. Pochi e semplici ingredienti per la preparazione di questo piatto, ma che rendono il tutto tremendamente gustoso.
Per ottenere un risultato ottimale occorre utilizzare il metodo di cottura tradizionale, ossia la cottura allo spiedo.

Anatra arrosto con semola croccante

 

Ingredienti per circa 4/6 persone:


un’anatra di circa 2 Kg
rosmarino
sale
semola grossa

……………


Pulire, lavare e asciugare bene l’anatra. Condire l’interno con sale e qualche rametto di rosmarino.
Posizionarla sullo spiedo e farla cuocere per circa 2 ore. Dopo un’ora salare l’anatra. Un quarto d’ora prima del termine della cottura, spolverizzarla con abbondante semola grossa e far cuocere sino a quando la semola non sarà ben dorata.
Servire ben calda su un piatto da portata tagliata a pezzi.

I tempi di cottura variano dal metodo che utilizzerete:
  • circa 2 ore se la cottura sarà al caminetto con la brace viva;
  • circa 1 ora e mezzo se in forno ma sempre utilizzando il girarrosto.

Roast duck with crispy semolina



"Simplicity" is the watchword of this very old recipe of the Sardinian tradition. Few and simple ingredients for this dish, but that make it tremendously tasty. For optimal results you should use the traditional method of cooking: on spit cooking. 

Ingredients for about 4/6 people:


a duck of about 2 Kg
rosemary
salt
durum wheat semolina

Clean, wash and dry the duck. Season the inside with salt and some sprigs of rosemary.
Place it on the spit and cook for about 2 hours. After an hour add salt on the duck. A quarter of an hour before the end of cooking, sprinkle with plenty of durum wheat semolina and cook until it will not golden.
Serve it hot on a serving dish cut into pieces.

Cooking times vary from the method you will use:
  • about 2 hours if the cooking is on the fireplace with the fire alive;
  • about 1 hour and a half if it in the oven but always using the rotisserie.
