Crostatine di mele autunnali

L'autunno è ormai arrivato, con i suoi colori caldi, l'aria più fresca e con tanti deliziosi sapori: dai funghi alle castagne, dai frutti alla frutta secca, sino ad arrivare ai piatti più sostanziosi. Anche i dolci non sono da meno, ma questo fa un'eccezione. Leggero, croccante, morbido, profumato, carico dei tipici sapori e colori del periodo: la cannella, la pasta frolla, la crema, la mela. Semplicemente da provare!

Ingredienti:

 

Per la pasta frolla:

300 g di farina
un cucchiaino di lievito per dolci
un uovo
4 cucchiai di latte
un cucchiaino di cannella macinata
150 g di burro
150 g di zucchero

Per la crema:

500 ml di latte
5 tuorli d’uovo
100 g di zucchero
un pizzico di sale
30 g di amido di mais
la buccia di limone non trattato

Per la farcitura:

5 mele golden
2 cucchiai e mezzo di zucchero
15 g di burro

Per decorare:

caramello
chips di mele
zucchero a velo

Per la pasta frolla:

Setacciare su un piano da lavoro pulito, creando una fontana, la farina e il lievito miscelati insieme. Aggiungere l'uovo, il latte, la cannella, il sale, il burro a fiocchetti e lo zucchero. Lavorare l'impasto fino ad ottenere una pasta liscia ed omogenea. Coprirla con della pellicola e riporla in frigorifero per circa 30 minuti.
Dopodiché, imburrate ed infarinate gli stampini. Stendete la pasta con il mattarello sino ad ottenere uno spessore di circa mezzo centimetro. Rivestire gli stampini, coprirli con dei dischi di carta da forno e porre all'interno di ciascuno di essi un pò di fagioli. Questo per ottenere la cosiddetta "cottura bianca". Infornarli a 200° per circa 20/25 minuti. A cottura ultimata, toglierli dagli stampini e fargli raffreddare.

Per la crema:

  In un pentolino portate ad ebollizione il latte con la buccia del limone. Togliete dal fuoco, lasciate riposare per circa 5 minuti, poi levate il limone.
In una terrina sbattere i tuorli con lo zucchero fino a renderli spumosi e chiari. Aggiungere il sale e l’amido di mais, e continuare a mescolare. Dopodiché aggiungere poco per volta il latte mescolando bene. Rimettere il tutto nel pentolino, e portare ad ebollizione per circa 2 minuti sempre mescolando bene affinché la crema non si attacchi.
Togliere dal fuoco, metterla all’interno di un recipiente freddo, coprirla con della pellicola in modo che non si formi una pellicina (la pellicola deve essere a diretto contatto con la crema), e fate raffreddare.

Per la farcitura:

Lavare, sbucciare e tagliare le mele a piccoli tocchetti. Farle rosolare con il burro su una padella antiaderente. Aggiungere lo zucchero, mescolare con delicatezza e continuare la rosolatura ancora per qualche minuto. Farle raffreddare.

Per decorare:

Mettere la crema in ogni crostatina, coprire con le mele e guarnire con un pò di caramello.

Tagliare una mela a fettine sottili. Disporre le chips su un foglio di carta da forno, cospargere di zucchero a velo, e far essicare in forno preriscaldato a 90° fino a raggiungere la doratura desiderata.
Utilizzare queste per accompagnare le crostatine.

Autumn has now arrived, with its warm colors, the cooler air and with so many delicious flavors: from the mushrooms to chestnuts, from fruits to nuts, until you get to the more substantial dishes. Even the desserts are no less so, but this sweet is an exception. Light, crunchy, soft, fragrant, full of flavors and colors typical of the period: cinnamon, pastafrolla, cream, apple. Just try it!


Ingredients:


For the pastafrolla:

300 g flour
a teaspoonful of baking powder for desserts
an egg
4 tablespoonfuls of milk
a teaspoonful of ground cinnamon
150 g of butter
150 g of sugar

For the cream:

500 ml of milk
5 egg yolks
100 g of sugar
a pinch of salt
30 g of corn starch
lemon peel untreated


For the filling:

5 golden apples
2 tablespoonfuls and a half of sugar
15 g of butter

 

For the decorate:

caramel
chips of apples
icing sugar

For the pastafrolla:

Sift on a clean work surface, creating a fountain, flour and baking powder mixed together. Add egg, milk, cinnamon, salt, sugar and butter in flakes. Work the mixture until the dough is smooth and homogeneous. Cover it with plastic wrap and store in the refrigerator for about 30 minutes.

Then grease with butter the molds and flour them. Roll out the dough with a matterello until you have a thickness of about half a centimeter. Cover the molds with the dough, then with a disc of baking paper and put inside each of them a little bit of beans. This is to achieve the so-called "white cooking". Bake at 200 ° for about 20/25 minutes. When cooked, remove them from the molds and let cool down.


For the cream:

In a small saucepan to bring to the boil the milk with the lemon peel. Remove from heat, let rest for about 5 minutes, then remove the lemon.
Ina bowl beat the yolks with the sugar until get a dough soft and light. Add the salt and the starch of maize, and continue to stir. After which add little by little the milk stirring well. Put back the everything in the saucepan, and bring to the boil for about 2 minutes always stir so that the cream doesn’t stick.
Remove from heat, put it into a cold bowl and cover with plastic wrap so that doesn’t form a skin (the plastic wrap must be in direct contact with the cream), and let cool.

For the filling:

Wash, peel and cut the apples into small pieces. Brown them in a pan with the butter. Add sugar, stir gently and continue browning for a some minutes. Let them cool.

For the decorate:

Put the cream into each tart, cover with apples and garnish with a bit of caramel.
Cut an apple into thin slices. Arrange the chips on a sheet of baking paper, sprinkle with icing sugar, and let to dry in an oven pre-heated to 90° until to achieve the desired browning.
Use these to accompany the tart.
