Zuppa di cipolle / Onion soup
Due ottimi motivi per presentare in tavola questa prelibatezza? Primo…è
gustosissima, decisamente adatta in queste fredde giornate invernali. Secondo…è
una stupenda ricetta per riciclare il pane raffermo, e perché no, anche i
rimasugli di formaggio che ogni tanto avanzano in frigorifero e non sappiamo più
che farne.
600 g di pane casereccio raffermo tipo spongiu
1 kg di cipolle miste bianche e rosse
uno spicchio d’aglio
2 cucchiai di farina 00
3 litri di ottimo brodo di gallina misto a manzo
250 g circa di formaggio a pasta filata
100 g di parmigiano grattugiato
3 cucchiai di olio extravergine d’oliva
sale e pepe bianco
600 g of stale bread type spongiu
1 kg of onions mixed white and red
a clove of garlic
2 tablespoonfuls flour type 00
3 liters of good chicken broth mixed with beef
250 g about of stringy cheese
100 g of grated parmigiano cheese
3 tablespoonfuls extra virgin olive oil
salt and white pepper
Ingredienti per 5 persone:

Tagliare le fette di pane e tostarle in forno. In una pentola rosolare lo
spicchio d’aglio e la cipolla tagliata a fette di circa 2 cm di spessore,
aggiungere la farina e farla tostare. Salare, pepare, coprire con il brodo e
cuocere coperto per mezz’ora a fuoco medio. Togliere l’aglio e iniziare a
comporre la zuppa in un contenitore a bordi alti che possa andare in forno,
versando prima un mestolo della zuppa di cipolle, spolverare poi con una
manciata di parmigiano e disporre le fette di pane.
Aggiungere ancora il
parmigiano grattugiato, il formaggio a pasta filata grattugiato o tagliato a
fette sottili, e coprire con un altro mestolo di zuppa coprendo per bene il pane
con uno strato di cipolle.
Continuare in questo modo sino ad ultimare gli
ingredienti. Passare in forno caldo sino a far filare i formaggi. Servire
caldo.
Un’alternativa sicuramente d’effetto è preparare la zuppa in cocotte
monoporzione.
