Risotto ai carciofi e prosciutto cotto / Risotto with artichokes and cooked ham

Parola d’ordine semplicità in ogni sua sfaccettatura, sia negli ingredienti sia nella preparazione, per giungere ad un unico risultato: un gran piatto leggero e fresco, che queste calde giornate di fine inverno invitano a consumare.

Ingredienti per circa 5 persone:


400 g di riso carnise i Chicchi d'Angelo iFerrari
4 carciofi spinosi sardi
200 g prosciutto cotto a cubetti
uno spicchio d’aglio
un cipollotto fresco
un ciuffo di prezzemolo
4 cucchiai d’olio extravergine d’oliva
2 bustine di zafferano
100 g di pecorino stagionato
sale e pepe
brodo vegetale

In una larga padella far rosolare i cubetti di prosciutto con un filo d’olio, scolarli e tenerli in caldo. 
Nella stessa padella rosolare lo spicchio d’aglio, il cipollotto ed il prezzemolo interi, unire poi i carciofi tagliati a fettine sottili e privati del fieno. 
A rosolatura completata, scolare i carciofi e lasciarli da parte in caldo. Unire al brodo vegetale l’aglio, il prezzemolo il cipollotto rosolati precedentemente e la crosta del pecorino ben pulita.
Con l’olio rimasto tostare il riso carnise i Chicchi d'Angelo iFerrari, aggiungere man mano il brodo vegetale e farlo cuocere per 12-13 minuti. A questo punto aggiungere i cubetti di prosciutto, i carciofi tenuti da parte, lo zafferano sciolto in un mestolo di brodo caldo e continuare la cottura per altri 5 minuti. 
Regolare di sale se necessario, pepare e mantecare con il pecorino grattugiato al momento. 
Servire caldo.

Risotto with artichokes and cooked ham



Simplicity in every facet is the watchword, both in the ingredients and in the preparation, to reach at a single result: a great light and fresh dish, to consume in these winter hot days.


Ingredients for about 5 people:


400 g of carnise rice by i Chicchi d'Angelo iFerrari
4 Sardinian artichokes thorny
200 g of cooked ham into cubes
a clove of garlic
a fresh onion
parsley
4 tablespoonfuls of extra virgin olive oil
2 sachets of saffron
100 g of pecorino cheese
salt and pepper to taste
vegetable stock

In a big pan, to brown the cooked ham into cubes with a little oil, drain and keep it warm.
In the same pan brown the garlic, the fresh onion and the parsley, then add the artichokes cut into thin slices and without hay.
A browning completed, drain the artichokes and let them aside in warm. Add at the vegetable stock the garlic, the parsley and the fresh onion previously browned and the crust of pecorino cheese well cleaned.
Toast the carnise rice by i Chicchi d'Angelo iFerrari with the remaining oil, gradually add the vegetable stock and cook for about 12-13 minutes. Add the cooked ham,  the artichokes kept aside, the saffron dissolved in a ladle of hot stock and continue cooking for another 5 minutes.
If needed regulate of salt and pepper, stir well with grated pecorino cheese at the time.
Serve hot.
