Polmone fritto di vitella: prumoi frittu

Il polmone, è sicuramente la parte che viene usata meno frequentemente del quinto quarto, rispetto ai tagli più "nobili" come la trippa, il fegato ed il rognone.
Può risultare complicato farlo apprezzare, ma vi assicuro che con "Su prumoi frittu", antica e rustica ricetta, si riuscirà ad attrarre anche i palati più restii. Un'ottima alternativa alla più classica fettina impanata, e con costi più contenuti.

Ingredienti per 5 persone:


800 g di polmone di vitella freschissimo
semola fine
olio extravergine d'oliva
sale

Tagliare il polmone a fette sottili. Lavare le fettine sotto l'acqua corrente, scolandole bene dall'acqua. Panarle con la semola da entrambi i lati, e friggerle in abbondante olio caldo.
Scolare eliminando l'eventuale olio in eccesso.
Salare e servire le fettine di polmone ancora calde.

Ingredients for about 5 people:


800 g of fresh veal lung
fine semolina
extra virgin olive oil
salt

Cut the lung into thin slices. Wash the slices under running water, drain well them of the water. Crumb with the semolina from both sides, and fry in hot oil.
Drain and removing the excess oil.
Season with salt and serve the lung slices still warm.
