Involtini di tacchino

Questa volta voglio parlarti della carne di tacchino, una splendida carne magra e leggera con un alto contenuto di ferro. Ottima da usare specie per creare piatti semplici e invitanti.
Solitamente del tacchino preferisco scegliere il taglio della coscia, anca e fuso, da fare arrosto, ma in questo caso, ho voluto concentrare l'attenzione sul petto, e realizzare dei gustosi involtini. Perciò vieni a scoprire la ricetta assieme a noi, non solo perché è davvero buona, ma anche perché è veloce, economica e soprattutto perché si usa una sola padella!! Possono bastare come ottimi motivi?

Ingredienti per 5 persone:

10 fettine di fesa di tacchino
10 fettine sottili di pancetta arrotolata o coppata
200 g di provola
80 g di parmigiano grattugiato
2 patate di media grandezza
1/2 cipolla piccola
uno spicchio d'aglio
brodo di carne quanto basta
un mazzetto di prezzemolo
salvia e rosmarino freschi
sale e pepe
olio extravergine d'oliva

Tritare l'aglio, il prezzemolo, il rosmarino e la salvia.
Sistemare le fette di carne su un tagliere e batterle con il batticarne per assottigliarle leggermente, condire con sale, pepe, e il trito di erbe aromatiche, una spolverata di parmigiano e qualche pezzo di pancetta, (ricorda di tenerne da parte 3 fette, ci occorreranno per ultimare il piatto) e un pezzo di provola. Arrotolare le fettine per formare gli involtini, e chiuderli con dello spago da cucina.
 Una volta sistemati gli involtini, occupiamoci dell'ultimo ingrediente le patate, che utilizzeremo sia per completare il piatto, sia per addensare il sugo. Lavare, asciugare, pelare e grattugiare le patate con la grattugia a fori larghi.
 In una padella far cuocere la pancetta rimasta, fino a farla diventare croccante, quindi tenerla da parte al caldo. Nella stessa padella versare un filo d'olio, le patate e le cipolle tritate. Lasciare cuocere a fuoco basso per qualche minuto salando leggermente.
Aggiungere gli involtini, e farli cuocere su ogni lato. Quando la carne è completamente sigillata, coprire con del brodo di pollo, e lasciare cuocere con il coperchio per circa 20 minuti, scuotendo la padella e rigirando la carne di tanto in tanto.
Trascorso il tempo controllare che la carne sia cotta e che il sughetto sia ristretto e cremoso al punto giusto. Se il sugo si dovesse restringere troppo aggiungere un mestolo di brodo. Regolare di sale e di pepe se occorre. Servire gli involtini ancora caldi, cospargendo sopra dei pezzi di pancetta croccante.
Ricordati di eliminare lo spago da ogni involtino prima di portarli in tavola....e buon appetito!

This time I want to talk about turkey meat, a wonderful lean and light meat with a high iron content. Excellent to use especially for creating simple and inviting dishes. 
Usually I prefer to choose thigh of turkey, hip and melted to roast, but I wanted to focus on the chest in this case for make tasty turkey rolls. So come on and discover the recipe with us! Not only because it's really good, but also because it's fast, economical and above all because one pan is used! Can they suffice as good reasons?


Ingredients for about 5 people:

10 slices of rump turkey
10 thin slices of rolled bacon or coppata
200 g of provola
80 g of grated Parmigiano cheese
2 medium sized potatoes
1/2 small onion
a clove of garlic
meat broth to taste
a bunch of parsley
sage and fresh rosemary
salt and pepper
extra virgin olive oil

Chop garlic, parsley, rosemary and sage.
Place the slices of meat on a cutting board and beat them with a meat mallet for slightly make thin them, season with salt, pepper, and chopped herbs, sprinkle with Parmigiano cheese and a few pieces of bacon (remember to keep them from 3 slices; you will need it for finish the dish) and a piece of provola. Roll the slices to form the rolls, and close them with the kitchen string.
Once the rolls are done, let us take the last ingredient: the potato, which we will use to complete the dish and to thicken the sauce. Wash, dry, peel and grate the potatoes with a grater to holes big.
Cook the remaining bacon until let it becomes crunchy in a pan, then keep it to heat. Pour a drizzle oil in the same pan, add the potatoes and the onions chopped. Season slightly with salt and let it cook low for a some minutes.
Add the turkey rolls and cook them on each side. When the meat is completely sealed, cover with chicken broth and let it cook with the lid for about 20 minutes, shaking the pan and turning the meat from time to time.
Finished the cooking time, check that the meat is cooked and the sauce is concentrated and creamy at the right point. If the sauce is too concentrated, add a ladle of broth. Adjust salt and pepper if needed. Serve the turkey rolls still hot, sprinkle on crunchy bacon pieces.
Remember to remove the kitchen string from each roll before bringing them to table....
