Su gattou

Su gattou, ossia dolce di mandorle croccanti, è uno dei dolci sardi fra i più antichi tipico del Campidano. Preparato come da tradizione per ogni festività (la fotografia infatti ricorda questo Natale appena trascorso), è uno tra i più goduriosi nonostante i suoi pochissimi ingredienti.
Viene realizzato in varie forme, ma le mani più abili riescono a costruire con esso delle magnifiche sculture.

Ingredienti:


500 g di mandorle sgusciate
500 g di zucchero semolato
alcune foglie di limone non trattate
un limone non trattato
acqua quanto basta
olio extra vergine d'oliva

Tagliare a listarelle le mandorle, metterle in un tegame e farle tostare per qualche minuto e quindi trasferirle subito in una ciotola.
In un altro tegame mettere lo zucchero insieme ad un pò d'acqua (qualche cucchiaio), mescolare accuratamente e poi lasciarlo imbiondire a fuoco moderato. Quando sarà di un bel colore dorato, aggiungere le mandorle e mescolare affinché l'impasto non si attacchi e non si solidifichi indurendosi.
Spegnere il fuoco non appena le mandorle e il caramello si saranno ben amalgamati.
Versare l'impasto su un piano di marmo unto con un velo d'olio extra vergine d'oliva. Stendere l'impasto utilizzando il limone, in modo tale da donare al croccante un delizioso aroma.
Quanto su gattou avrà uno spessore di circa un centimetro tagliarlo a rombi, e una volta freddo posizionarlo su alcune foglie di limone.

Su gattou, ie crunchy almonds' dessert, is one of the sardinian's dessert among the oldest typical of Campidano. Prepared as by tradition for each holidays (in fact the photograph reminded this Christmas just passed), it's one among of the most delicious despite its very few ingredients. It's realized in various forms, but the most skilled hands are able to build with it of the magnificent sculptures.


Ingredients:


500 g of shelled almonds
500 g of caster sugar
some lemon leaves untreated
a lemon
water to taste
extra virgin olive oil

Cut the almonds for the long, put them in a pan and toast them for a few minutes and then immediately transfer them in a bowl. Put the caster sugar together with a little water (a few tablespoonfuls) in another pan, stir thoroughly and then let to brown lightly over a moderate heat. When has a beautiful golden color, add the almonds and stir so the mixture does not stick and does not harden.
Turn off the heat as soon as the almonds and the caramel are well blended. Pour the mixture on a greased marble slab with a film of extra virgin olive oil.
Roll out the mixture using the lemon, so as to give the crunchy a delicious aroma. When su gattou has a thickness of about one centimetre cut into diamond shapes, and once that will be cold put them on some lemon leaves.
