Le crêpes

Le crêpes sono una specialità francese conosciuta ed apprezzata in tutto il mondo. Fanno sempre un grande effetto e possono essere consumate a tutte le ore del giorno. Ne esistono innumerevoli varianti che si possono realizzare con la stessa ricetta base.
Questa che segue è la mia versione per le crêpes dolci, che presenta alcune varianti rispetto alla ricetta originale di base. Ho, infatti, sostituito il burro con l'olio extra vergine d'oliva, aggiunto il marsala ed ho elaborato la pesatura in modo tale da facilitarne e velocizzarne la preparazione.

Ingredienti per circa 6 persone:


16 cucchiai colmi di farina 00
4 uova
4 cucchiai di olio extra vergine d'oliva
2 cucchiai di zucchero semolato
2 cucchiai di marsala
latte quanto basta*
un pizzico di sale

In una ciotola capiente setacciare la farina, lo zucchero ed il sale. Con un cucchiaio fare una fontana e versare le uova, l'olio, il marsala e un pò di latte. Iniziare a lavorare con una frusta fino ad ottenere un composto morbido e senza grumi. Aggiungere man mano il latte per diluire l'impasto.
Quando la pastella risulta liscia e ben lavorata, copritela con della pellicola e lasciatela riposare per almeno 30 minuti.
Successivamente riprendere il composto e, sempre lavorando con la frusta, unite altro latte, fino ad ottenere una pastella semidensa, omogenea e vellutata.
Cuocere le crêpes in una crêpiera (o padella per crêpes) o in alternativa si può utilizzare una padella antiaderente con i bordi bassi e svasati.
Scaldare la padella, spennellata leggermente con dell'olio e, versare un mestolo di pastella al centro. Roteare la padella inclinandola in tutte le direzioni in modo che la pastella ne ricopra il fondo. Quando i bordi iniziano ad assumere un colore dorato, girare la crêpe con l'aiuto di una spatola, oppure possiamo farla girare in aria inclinando leggermente la padella e dando un colpo deciso.
Terminare la cottura anche dall'altro lato, e poi far scivolare la crêpe su di un piatto. Continuare in questo modo fino ad ultimare tutto il composto ed impilando le crêpes una sull'altra.
Servire le crêpes ancora calde, o al massimo tiepide, farcendole con della buona confettura o marmellata. Sono deliziose anche accompagnandole con una crema al cioccolato e con dei fiocchi di panna montata.

*Come avrai notato in questa ricetta ho volutamente omesso il quantitativo del latte utilizzato, in quanto questo può dipendere sia dall'umidità della farina sia dai nostri gusti, se preferiamo una crêpe più o meno spessa. Come riferimento pratico, teniamo presente che la pastella deve nappare il mestolo ed essere fluida. Solitamente richiede circa 700 - 800 ml di latte.

The crêpes are a French specialty known and appreciated all over the world. They always make a great effect and can be eaten at all hours of the day. There are innumerable variants that can be made with the same basic recipe. The following is my version for sweet crêpes, which has some variations compared to the original recipe. In fact, I replaced the butter with extra virgin olive oil, added the marsala and I developed the weighing in way to facilitate and speed up the preparation. 
The result? They vanish in one instant!


Ingredients for about 6 people:


16 filled tablespoonfuls of flour 00
4 eggs
4 tablespoonfuls of extra virgin olive oil
2 tablespoonfuls of caster sugar
2 tablespoonfuls of marsala
milk to taste*
a pinch of salt

Sift flour, sugar and salt in a large bowl. Make a fountain with a tablespoonful and add the eggs, oil, marsala and a little milk. Start working with a whisk until the mixture is smooth and without lumps. Add the milk gradually to dilute the mixture.
When the batter is smooth and well-worked, cover it with the film and let it rest for at least 30 minutes.
Then take the mixture and, always working with a whisk, add more milk, until to obteiner a semi-dense batter, smooth and velvety.
Cook the crêpes in a pan for crêpes or alternatively you can use a nonstick pan with low sides and flared.
Heat the pan, lightly brushed with oil and pour a ladle of batter in the center. Spin the pan by tilting it in all directions so that the batter covers the bottom. When the edges begin to turn golden, turn the crêpe with a palette knife, or we can do it in the air by slightly tilting the pan and turn giving a decisive blow.
Finish the cooking on the other side, and then slide the crêpes on a plate. Continue in this way until all the mixture is finished and stacking the crêpes one over the other. Serve crêpes still hot, or at the maximum tepid, filling them with good jam or marmalade. They are also delicious, accompanied by a chocolate cream and with whipped cream flakes.

*As you may have noticed in this recipe I have deliberately omitted the amount of milk used, as this may depend on both the moisture content of the flour and our tastes, if we prefer a more or less thick crêpe. As a practical reference, note that the batter must veil the ladle and be fluid. Usually it takes about 700-800 ml of milk.
