Coniglio con le olive

Stanca delle solite ricette che immancabilmente prepari per le feste natalizie? Desideri fare un gran figurone con i tuoi invitati? Ti piacerebbe servire ai tuoi ospiti una carne magra, digeribile e gustosa?
Se le tue risposte sono state affermative, allora ti consiglio di preparare questa ricetta: il Coniglio con le olive. Ti permetterà sia di mettere d’accordo i gusti di grandi e piccini, sia di rendere il menù di Natale più curioso e leggero così da dar spazio alle altre portate in programma, specie se vorresti sfoggiare un ricco assortimento di dolci.


Coniglio con le olive: ricetta di una carne magra, salubre, ricca di proteine, fibre e ferro.

Ingredienti per circa 4/5 persone:


un coniglio di circa 1,500 Kg
2 spicchi d’aglio vestito
3 rametti di rosmarino
2 rametti di salvia
mezzo bicchiere di vino bianco
3 manciate di olive verdi in salamoia
brodo di carne quanto basta
3 cucchiai d’olio extravergine d’oliva
peperoncino rosso a piacere
farina quanto basta
sale

In un grosso tegame scaldare l’olio con l’aglio, il rosmarino, ed il peperoncino. Aggiungere la carne di coniglio già tagliata a pezzi, e lasciare rosolare la carne da ogni lato.
Salare, aggiungere il vino e sfumare a fiamma alta. Cuocere a fuoco medio per circa 35 minuti, rigirando di tanto in tanto.
Trascorso il tempo, unire le olive e proseguire la cottura per altri 7/8 minuti.
Per creare la salsina, prendere le olive usate in cottura (lasciandone qualcuna da parte), denocciolarle e metterle nel bicchiere del mixer ad immersione insieme al sugo di cottura. Frullare il tutto. Successivamente, trasferire il composto in un pentolino, aggiungere la farina quanto basta per rendere la salsina cremosa. Far scaldare il tutto a fuoco basso, ricordando di mescolare per evitarne la formazione di grumi.

Una volta pronta, versare la salsina su di un piatto di portata e posizionare i pezzi di carne su di essa aggiungendo le olive tenute da parte. Servire caldo.

Ingredients for about 4/5 people:


a rabbit of about 1,500 Kg
2 dressed cloves of garlic
3 sprigs of rosemary
2 sprigs of sage
half a glass of white wine
3 handfuls of green olives in brine
meat stock to taste
3 tablespoonfuls of extra virgin olive oil
red pepper to taste
flour to taste
salt

Heat the oil with garlic, rosemary and chilli in a large pan. Add the rabbit meat already cut into pieces, and let brown the meat on each side.
Add salt, the wine and let evaporate it to high heat. Cook over medium heat for about 30 minutes, turnin theirs from time to time.
After the time, add the olives and continue cooking for another 7/8 minutes.
To create the sauce, take the olives used in cooking (leaving some aside), to stone and put them in the glass of immersion mixer together at the cooking sauce. Blend everything. Next, transfer the mixture into a saucepan, add enough flour to make the creamy sauce. Cook everything over low heat, remembering to mix to avoid the formation of lumps.
Once ready, pour the sauce on a serving dish and place the pieces of meat on it, also adding the olives kept aside. Serve hot.
